In the specialized honey laboratory of Shahid Beheshti University (collaborator of food and drug administration ), the following tests of honey are performed:
Measuring the amount of *sucrose* that is actually the first test to determine the naturalness of honey. But please note that measuring sucrose alone is not enough to determine the naturalness of honey and some tests such as measuring proline should also be done.
Measuring the amount of *proline* that is another test to determine the naturalness of honey.
Amylase *(diastase) activity* measurement that indicates the freshness of honey.
Measuring the amount of *HMF* that increases in honey if it is heated and also with the passage of time (in many scientific articles it is stated that this substance is harmful to human health).
By measuring these four factors, it can be understood the quality of honey to a large extent.
